My journey with food presentation began when I attended a vocational high school that offered culinary arts as a trade. Half of the academic year was spent in culinary classes, and it was there that I discovered my love for plating desserts, thanks to one of my fantastic shop teachers, Mrs. M.
Mrs. M was a powerful, bold, intelligent, masterful, loud, hilarious, and caring woman with an incredible teaching talent. She had a way of making even the most complicated techniques seem simple, and she was constantly pushing us to be our best selves in the kitchen.
One of the things that set Mrs. M apart was her willingness to go above and beyond the primary curriculum. She would encourage us to bring pictures of dishes and techniques we wanted to learn. I remember I brought in a picture of a cake with really intricate piping, and she spent hours teaching me how to recreate the design.
But Mrs. M wasn't just a teacher to me, she was like a second mom when I was in school. She was always approachable and welcoming to her students, and she had a way of making each of us feel special and valued. Mrs. M first introduced me to the art of plating desserts. She showed me how to use a piping bag, create delicate chocolate curls, and balance flavors and textures for a truly memorable dish. She had a wealth of knowledge and experience, including work with VIP and celebrity clientele before her teaching days.
